Anthocyanins are polyphenols that are in fact the pink/purple pigment that are responsible for filtering and protecting the plant from UV rays. In our skins, the anthocyanins, the rich pigment, is not only an anti-oxidant, but has also been found to effectively undo sun damage and the negative effect that it can have on collagen production in athe skin – causing premature aging***.
*** Anthocyanins have been found to inhibit the MME enzyme in the skin which is over-produced with excessive sun exposure – and which in turn inhibits collagen production.
